If you don't have access to sugar-free baking fix, try this delicious sweet potato brownie recipe!

Ingredients:
- 1 cup mashed sweet potato (about 1 large sweet potato)
- 2 eggs
- 1/3 cup coconut flour
- 1/2 cup raw cacao powder
- 1/3 coconut nectar ( Coconut nectar has a glycemic index of around 35, much lower than many other sweeteners, which makes it a good option for a slower, more sustained energy release. It has a mild, caramel-like flavour that complements chocolate-based treats, so it should blend nicely with the sweet potato brownies without overpowering the taste.
- 1/4 cup melted coconut oil
- 1/2 tsp vanilla extract
- 1/4 tsp sea salt
- Optional: 1/3 cup noshu chocolate chips or walnuts

Instructions:
1. Prepare the Sweet Potato: Bake or steam the sweet potato until soft, then mash until smooth.
2. Combine Wet Ingredients: In a large bowl, mix the mashed sweet potato, eggs, rice malt syrup, coconut oil, and vanilla until well blended.
3. Mix Dry Ingredients: In a separate bowl, combine the coconut flour, cacao powder, and sea salt.
4. Combine and Stir: Gradually fold the dry ingredients into the wet mixture until a smooth batter forms. Add optional chocolate chips or walnuts if desired.
5. Bake: Pour the batter into a lined baking dish, spreading it evenly. Bake at 180°C (350°F) for about 20-25 minutes, or until a toothpick comes out clean.
6. Cool and Serve: Allow to cool before cutting into squares. Enjoy!

These brownies are fudgey, nutrient-dense, and naturally sweetened with the creamy texture of sweet potatoes. Enjoy!

Toppings for reindeers!

Pretzels
To create Rudolph’s antlers for your brownies, use pretzels! Salted pretzels are a great choice because the salt complements the sweetness of the chocolate, making for a deliciously balanced treat.

Red M&Ms
For Rudolph's iconic red nose, grab some red M&Ms! It might take a little time to sort out the red ones from the bag,  on but once you see how adorable your reindeer brownies look, it’ll be totally worth it. You can get Christmas packs that are half red!

Marshmallow Eyes
No Rudolph is complete without a pair of bright eyes! Adding white baby marshmallows is the perfect finishing touch to bring your reindeer to life. You can usually find these fun little decorations in the baking section of most supermarkets. We used melted Noshu cholate buds for the pupils.

Baking Tips
Bake your brownies until a toothpick inserted into the edges comes out clean. The centre might still be a little gooey—perfect if you love fudgy brownies! But feel free to adjust the bake time based on your preferred texture

Happy baking, and enjoy the festive season! 🎁❤️
